Like the Jerusalem fromagerie, the Tel Aviv branch too began from culinary passion and an attempt to promote food culture in Israel. Meet Igor and Liat Dudelzon, a married couple who have been into good food for their entire lives. Igor has been a chef for many years, but what is more important is that he and Liat just love to host friends and to cater them with food and wine wonders.
For years Igor and Liat have been faithful Basher customers, making from time to time all the way to Jerusalem and back to buy cheeses that you just can’t find anywhere else. So it’s not a wonder that the idea of founding Tel Aviv branch of Basher Fromagerie captivated them big time.
Saving you a plane ticket
At the store on Diesengoff str. you will not find the marketplace atmosphere that characterizes its Jerusalem counterpart. Here style and finesse are the name of the game, although the style is that of a small and cozy European food store, full of delicious things, with some heart warming French music playing at the background.
“Our prices are higher than in your local supermarket, — admits Liat. — But we certainly save you a plane ticket, because you can’t find things we offer anywhere else in Israel”. So the only alternative lies over the sea? You can’t be sure of that either. “A typical fromagerie in Europe offers only local cheeses, — says Igor. — It is hard, even if not impossible, to find a place that boasts such a vast choice of cheeses that we do in our shop at the heart of Tel Aviv. And I’m talking about cheeses made mainly by small countryside, family-owned dairies, cheeses of the very best quality”.
Cheese and more
We’ve been talking about hosting. But with all due respect to cheese, there’s more to the good hosting than that. Igor and Liat strive to make their venue a one-stop-shop on the way to a perfect meal that rewards the hosts with a lot of “Aaaahh!”, “Mmmm!” and “Darling, you’re going to that shop first thing tomorrow”. There’s a cheese for everyone
Not all of us like cheese. Or, at least, that’s what people say. But Liat Dudelzon challenges this stigma by promising that she can find an enjoyable bit even for a person who have always been sure that cheese is not his or her cup of tea. The cheese academy
Cheeses are characterized not just by their kind, but also by the region (a province, a city or even a village), the aging time and even by the cow’s or the goat’s diet. As Igor uses to say, cheese is a science, or a culture, and there are different levels of its understanding. And, of course, different levels of enjoyment.
